I am trying out my Stratus/Ipad2/Foreflight and notice this weekend that it would provide lots of other options (vis, flight rules) in flight, but never ceilings or satellite (greyed out).
Save me from the manual; is this something it normally should do?

Well, since you didn't want to bother to look in the manual, I took a few seconds to do it for you.

ADS-B does not include all the products that are available over the internet. Satellite among them. Below are the products included, from the Pilot's Guide:

NEXRAD composite

AIRMETs

SIGMETs and Convective SIGMETs

METARs

NOTAM(D) and FDC NOTAM (including TFR)

PIREPs

Special Use Airspace

TAF

You should be able to get ceilings, provided you've gotten a METAR update through the Stratus - Did you check and see when the last update was?

Satellite information isn't provided by ADS-B, so no matter which solution you use, you won't be able to get Satellite pics that way.
