But... why would those same guys follow each and every one and take a ton of pics. How many pics do you need of the top of a plane against a green background? I'd go and eat lunch and -watch-. Sound must be pretty intense too.

Low shutter speed (to get motion blur in the background) + fast target (few hundred mph) + long focal length makes for a difficult shot. The "keeper rate" is probably pretty low. Some examples of photos taken the same or a nearby a similar location.
