Class 3 medical PPL issue

Eh? This is a classic reason why psychologists usually don't have prescribing privileges (and why they shouldn't). Once you've applied and been deferred the cat is out of the bag. A consult with a HIMS AME before you applied might have sped things up. If you had been off the meds for 60 days, you could have used path I.
 
Gotta love CFIs training students, have them near solo and the medical is an issue.
 
Yet another failure of a CFI or flight school. Very disappointing
