Do I need to study information about AMEL if I am taking the test on a ASEL?
Are there AMEL questions on the written?

If you are referring to "studying the information in the ACS", your focus only needs to be on the information pertaining to ASEL if that's the aircraft being used and rating being sought.

Plus questions like this are covered by both the ACS and your instructor.

On the written exam, I don't recall any questions unique to AMEL since all of the knowledge, details, and procedures apply equally to both airframes.

There may be some questions that apply to both aircraft, but those will be covered in the ASEL areas. Don't worry about it.

There are no multi specific questions on the instrument written test that I am aware of. Further, I would fly an approach in one airplane the same way as the other.

There are multi specific tasks in the ACS for the practical test however. If you show up in a single, those areas will not be tested. If you elect to add a multiengine rating on at some point, the tasks you weren’t tested on will be tested at that point.
 
There's no "single or multi" instrument rating, just airplane. I also don't recall any class-specific written questions. The provision is that if you have a multi pilot certificate you will get a restriction that the instrument rating is limited to single engine unless you demonstrate a OEI approach on which ever ride was appropriate (could be the instrument or the multi class ride)
