What's For Dinner?

What's on the menu for tonight? Or just some favorite dinners? Pictures and recipes are not necessary but are happily received. I've been in a bit of a rut recently food-wise and it's hard to find good suggestions online that aren't just pasta dishes or twelve different ways to prepare chick peas (blech). Take-out and restaurant food is also fair game if that is what is on the menu!

We've got a super simple pizza crust rising for a few minutes in the oven in preparation for some sausage and garlic and tomato sauce with cheese for tonight. I was going to try a white sauce and chicken as toppings, but I forgot to throw the chicken in the oven earlier. Maybe another day...if I remember.

(Yes, I know there's a thread (or a few) somewhere around here, but it's easier to make a new one than find the old ones and I'm lazy so... )
Baked ziti with Beef or sausage bits mixed in with the tomato sauce, and lots of mozzarella on top. Bake untill the cheese is thoroughly melted but not brown. Remember not to boil the ziti too much because it continues absorbing moisture while baking.

We're on a little vacation, and needed a quick dinner so I fried us up some quick beef fajitas tonight. This cabin has a gas stove and I am enjoying it a lot! IMG_20241130_160537724_HDR.jpg

My wife likes them, I stick to the crab and shrimp.

I like the crab better, but crawdads are good, too.

When I was a kid it used to be called “Frogmore Stew,” after Frogmore, SC where it supposedly originated. Frogmore is no more, however, and somewhere along the way the name changed, probably when it became a restaurant dish.

Back then, a low country boil was the southern equivalent of a Boston clambake. A boil was done outdoors using a large pot or kettle, often over an open fire, and everything dumped onto newspaper spread across a picnic table and then slathered with butter. Grab a beer and fill your plate.

What happened to Frogmore?

My college roommate joined the Peace Corps. Prior to going to the Ivory Coast for his peace corps mission, he and a small group of corpsmen were sent to Frogmore to learn how to teach English as a second language. The predominant language in Frogmore was Gullah, and not related to English sufficiently to facilitate easy learning.

He reported that the level of poverty and the lack of education in Frogmore was astounding.

He also said nothing about Frogmore Stew. But during my Haze Gray period (tour of duty in the USN) in Charleston SC, I got to know it by different names. Yum!

I just realized what’s missing. In the name of Neptune, where are the hush puppies?!

You can’t have seafood in the South without hush puppies. Pretty sure it’s a law.
My wife is from NC and makes the best hush puppies. She just mixes ingredients from memory and drops them into the electric deep fryer. I asked once if the oil was unhealthy... never asked again

Oh, I think it’s still there, but the last I knew the population dropped to the point that they lost their PO, so mail has a different town name. Probably Beaufort?

Yep. I was part of a mission trip to the area back in the ‘70s. Very poor, with few prospects.
