So during the preflight checklist I go around to the front and check the tension of the alternator belt. What exactly is the purpose of this and what does the alternator belt do?
 
You are checking to ensure there is sufficient tension in the belt, so it isn't slipping/squealing when the engine is running (your instructor should have taught this). Also checking to ensure that belt isn't worn out, cracked, or too tight and about to break.

If you belt has the ability to alternate between black and brown by reversing the buckle and the tension appears to be too tight...go for a run.
 
If the alternator belt breaks during flight, the plane will still run without the alternator. But all of the electrical devices in the plane will now be powered by the battery. When the battery dies (and it won't take long) all electrical devices become inop. That includes radio, GPS, etc. this is why it is also a good idea to keep an eye on the ammeter in the cockpit.

The purpose of of the alternator belt is to spin the alternator creating electricity. The check you are performing is to hopefully prevent the belt from slipping, causing premature wear and failure, and potentially the loss of some or all of the electric production; or jumping off altogether. Best way to check is by trying to spin the alternator pulley. If you cannot spin it inside the belt without great effort, you are ok. Also too tight is as great a problem as too loose as it puts excessive, unnecessary, and destructive load on the bearings and shaft as well as heat and wear on the belt and pullies.
 
I've had people think that that belt drives the propeller.
