In the 16 years I have owned my plane I have performed most of the maintenance on my Cherokee under the supervision of my mechanic. I am thinking of trying for my A&P cert and need to create a list of the work and times I have performed. Is there a document that indicates how long various maintenance/repair tasks should take?

Your list will have to come up with 30 months of documented experience. And I'm not aware of any document with the information you seek.

Unfortunately it is not that simple. The required work experience is not so much based on specific tasks and time, but rather specific categories and total months of experience. Per the FARs it is 18 months airframe topics and 18 months of engine topics or 30 months combined. Considering each FSDO has their own "requirements" it is best to inquire with your local FSDO what they want to see from the experience side prior to issuing your A&P test authorization tickets. Normally, outside you having a regular job working on aircraft, it can be difficult to go the experience route part-time. On a side note, the better method is to find a local community college that offers a A&P course that gets you to an A&P in 2 years.
 
as bell206 its more complicated than that. I did mine through the experience route over 20 years ago, it was difficult then. even worse now. they will want to see documentation from the supervising A&P not just you. I was lucky in that the ASI that issued mine had know me, the flight school i was part of, and the supervising A&P IA for many years. without that prior relationship i doubt that I would have gotten the authorization to test.
