I went to look up something on Google using my iPhone and discovered that the App had changed to voice only with no way to retrieve a keyboard.

To hell with you Google.

did you actually tap in search box below the Google name?

Doing so brings up the keyboard.

Must've somehow turned on the Google microphone function.
Open Settings>Privacy>Microphone>Google and turn off the microphone

Or just launch Chrome and go to google.com.
