Cookies!

By popular request:

Larry Edwards' Diablo Cheese Cookies

1# sharp or extra sharp cheddar (freshly shredded)
1 stick of butter, melted
1 and 1/4 cup of flour
HOT STUFF: your choice of red pepper flakes, cayenne pepper, diced fresh or jar jalapenos, to your level of heat.

(I really like them with the jalapenos! The ones at the flight line were with the red pepper flakes)

Mix all ingredients by hand (wash them afterwards before you touch your eyes!). Make 1" dough balls, space evenly on an ungreased cookie sheet lined with parchment paper. Bake at 465F for 15 minutes.

Put on paper towels to drain the extra oil from the cheese and butter. Go grab a cold beer and enjoy.

Dang, after having made the run for the ingredients, I'm really bummed that I didn't get to try any! :( They sound great! (and healthy NOT!:yikes:)
