For the last several years I’ve cooked beef at Christmas, depending what’s on sale, either beef tenderloin or standing rib roast. Publix has standing rib roast, deboned with bones tied on for $6.99 lb through Christmas! I’ll pick up two 8-10 lb roasts to cook on the Big Green Egg. We usually have plenty, yet very few leftovers! I use the reverse sear method, cook it low until it’s rare, pull it off crank up the heat and get a little char on the outside!
