What is the best place for shopping to buy one already done? Ideally I would like to buy something like a Cub Crafters EX2 or EX3 on amphibs, or one that is really nice, and I can put on amphibs.

Builder forums for the specific type, and the kit company often tend to know of owners/builders who may be looking to sell.
This. Cruise the forum for classifieds, if you don't find what you want, post a "want to buy" with your desires. Often you get first rights to the perfect plane from a fence-sitting seller who sees an easy sale right before their eyes.
