When in town, stay at 'NH Hotel Klösterle'. Basically a modern hotel built into the shell of a medieval grain store:

If you are at all into railroad stuff, Nördlingen is the site of the bavarian railroad museum:

They have several steam locomotives that are equipped to run on the tracks operated by the regional rail system. The museum offers excursions going to places like Salzburg and into foothills of the alps.

Nördlingen itself is circular medieval market town. Well preserved and not quite as over-run with tourists as all the baroque stuff in Bavaria.

Oh, and they have an airport...
