Land at KGTU, park for way less (not sure exactly but it's certainly not anywhere near $40) and probably about the same distance to downtown (maybe a bit more...and not fun if you are driving down I-35 in rush hour traffic...) as you are driving from out on the tollway. Super friendly folks...

There are several others just as good now...Franklin's is great but you have to get there early and wait, most times at least a couple hours depending on how early you got there to eat. So, it's a half-day experience...not sure with only one day extra you'd want to spend it that way.
