Has anyone found a good way to get a data signal at higher altitudes. Maybe via a sat system like https://www.iridium.com/products/iridium-go/ or something like that?

I wonder if Starlink will offer a mobile receiver of some sort? SiriusXM works great in a plane, I'd think satellite based internet would as well.
