What do I do with the remainder of the beef tenderloin?

You know which part I’m talking about, the left over tapered end.
 
Slice it up, sautée with onions and peppers, and use for steak sandwiches.

Stir fry.
 
Or put it in the meat grinder for some excellent steak salad spread.
 
Are we talking cooked or uncooked?
 
I had to Google that, but it sounds pretty good.
 
For the record, it was decided to try a beef bourguignon.
I decided, once, to do the Julia Child recipe from scratch. It’s considered one of the all time great recipes.

It was better than good, it was outstanding. But it was almost an all day job.

I need to do that again!
 
Chop up well and then make an omelette with it and your cheese or veggies of choice for breakfast.
 
For me, it's would end up in fajitas, if there was enough left after cubing it and quick sear to just have little steak bites.

If I had a dog I'd be happy to give them some steak now and then, but not tenderloin or ribeye. That's just silly, and I think every dog I've known liked chicken better than beef anyway.

I did that too, to surprise my wife after we’d watched Julie and Julia

You’re right; it was excellent, and it takes forever to make. And it’s not just a long cook time; it’s hours of hands-on prep work
