the pizza that many New Yorkers love to claim is not pizza has become one of the most sought-after dishes in lower Manhattan. Actually, only two blocks from Dominique is the heartbeat of the frenzy: a small, tin-roofed, tavernlike storefront named Emmett's, opened in late November by Lake Forest native Emmett Burke, who, at 31, decided to leave behind his stressful life of high finance and introduce New York to the pride of Chicago. Smart wager: Emmett's is so hot right now that, on a Sunday night I put my name in for a table at 5:30 p.m., sat down about 8:30 p.m. and received my handsome (if undistinguished) pizza at 9:30 p.m.

Emmett's is so popular that, even in the dead of this winter, an eager crowd can often be found milling around outside, curious to learn about this strange, magical species of pizza that takes 50 minutes to bake.

They can't get enough of the good stuff either!

For the first couple of weeks he was open, Emmett said, the customers were neighbors, who sidled up to the marble bar. "But as we started bringing out pizza, people would ask if it was cake, and soon word spread, and then the foodies came."

Today, though Emmett's pizza would be generic in Chicago (the crust is stiff, the sauce just OK), the demand is high: Weekend waits have hit four hours; the night that I visited, Emmett was fielding calls every few minutes, patiently explaining they could take no more orders that night.

He began saying this at 7 p.m.
NYers are so used to the pizza desert that is their life that they are demanding mediocre Chicago pizza over their greasy cheese bread!

There used to be an Uno's right down the street from my airport, I miss them. Then again, they're gone for a reason.

I still maintain that the best pizzas are made in the kitchens of Steinholme.

Maintain all you want, it doesn't make it correct. Especially when your pizzas are meatless.

No, no, no. The best pizzas are those that are made locally by your local Mom and Pop pizza place.

I prefer pizza in Pisa. And Vienna (Bizi Pizza). Florence and Naples, too.
 
A bread bowl filled with marinara and some cheese is considered pizza?
 
I'm a New Yorker and I learned about pizza by living in New Haven and Boston.:D

I've had pizza all over Italy. Frenchie (From Hogan's Heroes) was right. Italian pizza tastes like a saltine cracker with ketchup. Pizza is the ONLY food I ever had in Italy that I didn't love.
 
I've always loved Chicago style pizza, and although I like the stuffed, I prefer the thin crust.

My fav pizza place is Giordano's in Chicago, but a VERY close second is Zachary's here in the Bay Area. I drive 45 minutes to their closest store every Sunday for my pizza fix. It's so good, I sometimes crack open a nice bottle of wine to have with it. To me, it's like heaven on earth.

But I'm not a fan of the greasy slice of pie on a paper plate type of NY pizza. When I first went to Manhattan years ago, people were telling me to try to various "Ray's" pizza places. Jeez, when I got there it was overwhelming. There were so many varieties of "Ray's" pizza joints. But I didn't like any of them. To me, the greasy slice of pie on a paper plate tasted like bad pizza at a state fair.

One of these days, I want to go back to NY and try some of the good coal-fired oven types of pies. Those look really good. But I doubt anything will ever surpass Chicago style thin for me - I just love it too much.

Yeah. There's not much about Chicago that I am a fan of, but I gotta give you guys that one. And I'm from Indy, so this isn't home town bias. But I will take New York style cheese cake over the creamy-mushy-custard-like stuff you guys try to pawn off as cheese cake. Nothing like Junior's. The way cheesecake was meant to be.

I don't like Chicago cheese cake either. By far, the best cheesecake I ever had was back in Canada though.

Rich are you gonna be anywhere near Brooklyn next month? I am headed there for some work and will try a genuine NY Pizza.

I live in NY and I can't even say that there is any good pizza in manhattan. Now in queens, Brooklyn, even Long Island there many, many great NY pizza places. You can walk right in get a couple of slices, nothing better.
