Should just control how much you have to move the control stick before you see a corresponding control input. It’s sort of like a sensitivity adjustment. You can think of it like the size of the dead area around the control stick when the stick is centered. Larger null zones mean you have to move the control a greater distance away from center before is registers an input. I usually leave nulls at zero unless there’s something about an aircraft that is hard to control.

Correct, you can relate it like that. However, the sensitivity adjustments as well as the game “realism” settings can also make similar adjustments. When you fly a 737, it doesn’t react like a 172 even if your sensitivity and null zone settings are identical due to how the software designers built it.
