Flying South of Florida

This isn't something I have planned to do for a very, very long time. I'm just curious on a few things, so here's a multi-question thread:

What all is involved in planning/orchestrating the trip past the ADIZ to places like Kingston or San Juan?
What are the changes to all the things we learn? Communication procedures, etc. They all stay the same?
Where are the safe places to go that might be ok to leave the plane for a while?
