Scott's book does just that.....I would be interested in an aviation weather book from a scientific perspective. Most of the meteorology texts out there are not particularly geared towards aviation, and the aviation weather books tend to gloss over the science behind weather.

Remember, Scott's claims to fame are both an educator/CFII and a weather scientist/researcher.
I haven't read the entire book yet, but the segments I have gone through approach the topics like you want, providing good depth on not only what do you need to know as a pilot, but why that phenomenon happens and what is going on when it is happening.
