Looking at possibly putting in a new Artificial Horizon, and seeing that there are options for no tilt, 8 degrees of tilt, or custom tilt.

Just to clarify, is that "vertical" from fore-and-aft (pitch) or left-and-right (roll)?
My guess is fore-and-aft.

Yes. Level aircraft, measure from a perpendicular station line. Usually anywhere from 0 deg to -10 deg at the top of the panel. Any lateral tilt is an issue.
