    I've noticed a few cases have ventilation or perforation holes on the back side. I like the idea of just a skirt that goes around the edges to protect the corners in case of a drop, but I don't think I've seen anything like that.

    The FAA ADD surprise catches a lot of new students. Years ago I mentored a kid in a similar situation. With the help of two great AMEs (one who’s already responded here), he was able to work through the system. I hope it works out for you, too.

    I’m with you on this one. I sear it over the hottest part of the grill to get a good crust, then indirect heat until med rare in the thickest part. I’ve never tried trussing one.

    The thin end part will get more done-er than the thick part. I haven't tried sous vide. That would get it all to the same temp, then you can sear it on the grill.
